Features

Choose what you are baking, how many and when it should be on the table; Levaino turns the ingredients into grams and the steps into times. Once the plan is started, the current step and the time left stay at the top of the page, and you are reminded when the next step is due.

Key features

Weigh and mix
What to weigh sits at the top of the page in large grams; each line can be ticked off once weighed. The water temperature you need is written there too. "Full formula" shows the whole dough with total flour and water, and what goes into the sourdough and the preferment.
Hands-on time and waiting
The plan is worked back from serving time: mixing, bulk fermentation and folds, dividing, shaping, cold retard, taking out of the fridge, preheating, baking. The day bar shows hands-on work and waiting separately; fermentation times are adjusted for kitchen and fridge temperature and the amount of yeast.
The "Now" card and reminders
"Start plan" brings the current step, a ring with the time left and the end time to the top of the page. "Done, next step" moves the plan on; "+15 min" postpones it. While the application is open, notifications, in-app alerts and a sound mark each step and fold; the plan can also be added to a calendar (.ics).
Recipes and samples
Recipes are in the panel on the left, with an icon for each kind and a search field. On first launch Neapolitan pizza, New York pizza, focaccia, baguette, sourdough country loaf, pide and simit are included; samples can be edited and deleted, and "Add samples again" brings them back.
Dough character
The ratios are in the panel on the right, in plain words: hydration (with a short note on how soft the dough will be), salt, yeast, preferment, flours, other ingredients, temperature and notes. "Why are ratios based on flour?" explains baker's percentages with an example.
New dough
Three questions: what you are baking (pizza, tray pizza, bread, focaccia, baguette, pide, simit or a blank recipe), how many and how large, and when it is served. Sourdough or instant yeast is chosen; if that yeast cannot make it in time, you are told.
Amount and time
From the number × weight of dough balls (with a loss allowance) or from the amount of flour; serving day and time, kitchen and fridge temperature, all in one box. If the earliest start time is given, the amount of yeast that fits the plan is suggested.
Yeast, preferments and sourdough
Instant, dry and fresh yeast (amounts converted between types), sourdough or no yeast. Poolish and biga with their own flour share, hydration and yeast; the flour and water in the sourdough and preferment are counted in the totals. Blends of several flours.
Water temperature
Water temperature from the desired dough temperature, taking kitchen, flour and preferment temperatures and friction (by hand or mixer) into account.
Recipe card
One page with amounts, plan and notes: print, PDF, PNG, copy as text, and share with the device's own share feature. Grams / ounces, °C / °F.
Files and backup
One recipe or all recipes are saved and opened as .levaino files. "Back up…" puts all Levaino data and settings into a single file, and "Restore from backup…" brings them back on the same or another device.
Works offline
All calculations, the plan and reminders work without an internet connection; no account is needed.

Devices and browsers

  • On a desktop, recipes are on the left, the dough in the middle and the dough character on the right. On a phone and a tablet in portrait, the bottom bar holds Dough, Recipes, Character and More.
  • Made for the kitchen on a phone or tablet; keeping the screen on while the plan is open is optional.
  • Notifications arrive while the application is open; where notifications are not available, reminders are given in the application and with sound. A plan added to the calendar also reminds you through the phone's own calendar.
